Ingredients

  • 2 eggs

  • 1/2 cup castor sugar

  • 1/2 cup brown sugar

  • 1/3 cup vegetable oil

  • 1/2 cup chopped walnuts

  • 1/2 cup golden raisins

  • 2 tsp baking powder

  • 1 1/2 cup white flour

  • 1 tsp cinnamon powder

  • milk (as required)

Directions

  • Preheat your oven to 180 °C. In a bowl combine your eggs, sugar, and oil and whisk thoroughly.
  • In another bowl, add your raisins and pour boiling water on them. Set aside and allow to soak for 10-15 minutes.
  • To your egg mixture, add the flour, baking powder, cinnamon powder, and chopped walnuts.
  • Once your raisins have turned plump, drain them and pat dry with a paper towel. Now, add them to the batter as well.
  • You should have a silky batter than is not too thick to pour. If you sense that your batter is too thick, add some milk to thin it out.
  • To a muffin pan, add your muffin liners. You can use store bought ones or make your own using an upturned glass and squares of parchment paper.
  • Scoop your muffin batter into each muffin liner about 3/4 way up. This recipe yields up to 10 muffins.
  • Place your muffin tray in the oven and bake for 25 minutes or until a toothpick inserted comes out clean.
