Apple Pie Turnovers

Some days you’re just craving an apple pie but really don’t want to go through the whole process of baking one. Or maybe you just want a single-serving (where my single living-alone girlies at?). For those times, these apple pie turnovers are the perfect fix. Not only do they taste exactly like apple pie but they’re also better than your favorite bakery apple pockets.

We absolutely do want to make things easier and quicker, so of course we will be using store-bought puff pastry. It’s fluffy, flaky and when baked right gives you the flaky crust texture you are craving. Does this qualify as a lazy girl recipe? It absolutely does.

What Do I Need For These Apple Pie Turnovers?

  • Puff Pastry: Any store-bought puff pastry will do. I get mine in individual cutout sheets from the frozen section.
  • Fresh Apples: Granny Smith apples all the way so we can replicate the delicious apple pie flavor.
  • Cinnamon: We can’t have apple pie flavors without cinnamon.
  • Sugar: I used castor sugar for this recipe.
  • Fresh Lemon Juice: The lemon helps balance the sweetness with a little bit of tartness.
  • Corn Flour: Just a teeny tiny bit of corn flour to thicken your filling and avoid getting soggy apple pie turnovers.

How Can I Get A Golden Shiny Crust?

The standard and most-used ingredient to give your crust a shiny and golden finish is a regular egg-wash. Simply beat up your eggs and use a pastry brush to brush the tops of your turnovers before baking. But since these are single-serve portions and we wouldn’t want the rest of the whole egg to go to waste, you can either use:

  • Milk: I know this one sounds weird, but I use whole-fat milk to brush my pastry bakes and they always turn out incredible.
  • Mayonnaise: You can also use a tiny dollop of mayonnaise to brush your puff pastry with. It yields the same gorgeous results.

How To Prepare Your Apple Pie Filling?

I used one medium Granny Smith apple for this recipe and it gave me four large 4x4in apple pie turnovers. If you’re going for a smaller size, you can easily make 6-8 turnovers.

  • Step 1: Peel and slice your apples.
  • Step 2: Squeeze a few drops of lemon juice on your apples.
  • Step 3: Add some sugar and cinnamon on top.
  • Step 4: Let your apples rest for 15-20 minutes until they release their juices.
  • Step 5: Add a little bit of corn flour.
  • Step 6: Cook your apples for 3-5 minutes until the juices form a thick slurry.

And that’s how easily and quickly your apple pie filling is ready.

Can I Prepare The Apple Pie Filling In Advance?

Yes, absolutely. If you want to make a larger batch of apple pie filling, you can store it in an air-tight container for up-to a week in the fridge and up-to 3 months in the freezer. The lemon juice helps preserve it and cooking it for a few minutes reduces its chances of going bad.

Ingredients

  • 1 large Granny Smith apple

  • 2 tbsp granulated sugar

  • 1 tsp cinnamon powder

  • 1 tsp lemon juice

  • 1/2 tsp corn flour

  • puff pastry sheets

  • eggwash/milk/mayonnaise

Directions

  • Preheat your oven to 180°C.
  • Peel and slice your apple into thin even-sized pieces.
  • Place your apples in a bowl and add the lemon juice.
  • Now add the sugar and cinnamon powder and set aside to rest for 15-20 minutes.
  • If you’re using frozen puff pastry, now would be a good time to remove it from the freezer so it can thaw.
  • After your apples have released their juices, add the corn flour and toss together well.
  • Place a pan on medium heat and add your apple pie filling.
  • Cook for 3-5 minutes, stirring continuously, until the juices form a thick slurry.
  • Remove from the heat and start preparing your turnovers.
  • Spoon your filling in the center of each puff pastry piece and cover with another sheet of puff pastry.
  • Use a fork to seal the edges tightly.
  • Lightly brush your turnovers with egg wash and bake for 25 minutes until they are puffed and golden brown.
  • Your single-serving apple pie turnovers are ready!
