Ingredients

  • 2 eggs

  • 3/4 cup sugar

  • 1/2 cup oil

  • 1 cup flour

  • 1 tsp baking powder

  • 2 medium carrots (grated)

  • 1 tsp cinnamon

  • 1/2 cup walnuts (chopped)

  • 1/2 tsp nutmeg

Directions

  • Preheat your oven to 350°F (175°C). Grease and lightly flour an 8-inch round or square cake pan or loaf pan, or line it with parchment paper.
  • In a large mixing bowl, whisk together the eggs and sugar until the mixture is pale and slightly thickened.
  • Gradually add the oil and continue whisking until fully combined.
  • In a separate bowl, sift together the flour, baking powder, cinnamon, and nutmeg. Mix to combine.
  • Add the dry ingredients into the wet mixture. Use a spatula or wooden spoon to gently fold everything together until just combined. Be careful not to overmix, as this can make the cake dense.
  • Fold in the grated carrots and chopped walnuts until evenly distributed throughout the batter.
  • Pour the batter into the prepared cake pan, spreading it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  • Serve as is, or dust with powdered sugar for a simple finish. If desired, pair with cream cheese frosting or a drizzle of maple glaze for extra indulgence.
