This Tomato Spinach Sandwich is my signature sandwich recipe. It’s completely vegetarian, and it’s so full of flavor. When I tried it for the first time, I was blown away by how good it was.
At first, Tomato Spinach Sandwich does not sound all that appetizing. I agree. But, give it a chance and watch as it transforms into your favorite snack.
As a kid, I hated sandwiches because all I knew of them were egg salad sandwiches. And while I do enjoy eggs now, I could not eat them as a kid. In fact, my stomach was completely incapable of digesting eggs. When my mom took me for a doctor’s check up after the umpteenth time of getting severely sick after eating eggs, the doctor said “don’t worry about it, she will be able to eat eggs after the age of 18.”
I did not know eggs needed you to be of legal age??
That aside, I’m also huge meat lover. I do love my meat. And other meat lovers have always scrunched up their nose at me when I mentioned this sandwich because “it has no meat, how can it be good?”
But, trust me when I tell you that this recipe will convert any meat lovers out there. It is but a humble sandwich, but what it lacks of grandeur, it makes up for in taste. Plus, you can always add in some meat if you’d like.
I personally prefer the original recipe without the meat.
What goes in this Tomato Spinach Sandwich?
There are three main ingredients that are the star of this show.
- Sun-dried tomatoes
- Baby spinach leaves
- Cream cheese spread

What kind of meat can I add?
Out of all the different types of meat I’ve experimented with adding to this sandwich, here are my top two favorites:
- Turkey ham slices (bonus points if it’s smoked)
- Shredded chicken breasts
You can definitely add red meat as well, but I find that it overpowers the rest of the flavors. And we don’t want to steal the spotlight from the main ingredients.
What type of bread should I use?
Your bread choices are entirely a matter of preference. My favorite bread to use is a multi-seed wholemeal loaf. Not only does it add an immense amount of flavors, but the seeds also add more texture to an otherwise soft bite.
This sandwich is perfect for breakfast or for a midday snack – and it’s vegetarian! That ticks a lot of boxes!
