I chose to cook this recipe on a stovetop grill. I have also made it in the oven and it turned out perfect. Besides, you can totally make these in a saucepan as well if you’re not too picky about the grilled lines (hehe!).

What Are The Stars Of This Lemon Chicken Skewers Recipes?

As the recipe’s name suggests, the lemon plays a huge part in this recipe. However, it is also a little on the spicy side. I love a healthy amount of chili and paprika in my grilled dishes. You could totally reduce the level of chili or paprika.

I also chose to use chicken thighs instead of breasts because they’re so much juicier. I find that chicken breasts tend to be tougher once grilled or baked. You can obviously choose to go for your preferred cut as well.

Of course, I wanted to elevate this dish and since we’re opting for flavors of summer, what better way to complement these grilled lemon chicken skewers than with a bed of dill yogurt dip?

The spices and tanginess of the skewers pair perfectly with the cool and earthy flavors of the yogurt. It tastes fresh and the range of flavors will leave everyone smitten.

Do I Have To Make The Dill Yogurt Dip?

The dip is absolutely optional. You can leave it out entirely and serve your lemon chicken skewers on a bed of fresh spinach, arugula, pita bread, rice, or even nothing at all.

The recipe is super simple. Simply combine Greek yogurt with dill, minced garlic, and salt and voila!

I personally love yogurt and hence, try to add it to everything. I think it has something to do with being so in love with the Turkish cuisine in general.

Ingredients

  • 4 chicken thighs or 2 chicken breasts

  • 1/4 cup lemon juice

  • 4 tbsp yogurt

  • 1 tbsp chili flakes

  • 1 tbsp paprika or chili powder

  • 1/2 tsp cumin powder

  • 1/2 tsp coriander powder

  • 1 tsp turmeric powder

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 2 tbsp olive oil for grilling

Directions

  • Begin by chopping your thighs or breasts into bite-sized cubes.
  • In a bowl, add your chopped chicken and all of the remaining ingredients. Mix well to combine and set aside to marinade for about 20 mins.
  • Once marinated, place your chicken pieces onto a wooden skewer making sure to not overpack each one. 4-5 cubes should work well per skewer.
  • Heat up your grill pan on the stovetop over a high flame and add the olive oil. Once it starts smoking, add your skewers in. Be sure to not overcrowd the grill.
  • Sear well on all sides until you have a gorgeous color and then reduce the heat to a medium flame.
  • Cook your skewers for 8-10 mins until fully cooked through.
  • Serve with pita, your preferred sides, or on a bed of fresh spinach, arugula or yogurt.
