As the recipe’s name suggests, the lemon plays a huge part in this recipe. However, it is also a little on the spicy side. I love a healthy amount of chili and paprika in my grilled dishes. You could totally reduce the level of chili or paprika.
I also chose to use chicken thighs instead of breasts because they’re so much juicier. I find that chicken breasts tend to be tougher once grilled or baked. You can obviously choose to go for your preferred cut as well.
Of course, I wanted to elevate this dish and since we’re opting for flavors of summer, what better way to complement these grilled lemon chicken skewers than with a bed of dill yogurt dip?

Do I Have To Make The Dill Yogurt Dip?
The dip is absolutely optional. You can leave it out entirely and serve your lemon chicken skewers on a bed of fresh spinach, arugula, pita bread, rice, or even nothing at all.
The recipe is super simple. Simply combine Greek yogurt with dill, minced garlic, and salt and voila!
I personally love yogurt and hence, try to add it to everything. I think it has something to do with being so in love with the Turkish cuisine in general.
